Watermelon Cream Popsicles {Quick & Easy Snacks!}

We are at the weird time of year where there is still time for some summer fun, but we have to be thinking about back to school as well. One thing is constant, however, moms are always in need for quick and easy snacks. Here in San Diego, August- October are when we get our really high temps so a popsicle is the perfect thing whether we just went to the beach or Avery is coming home from an exciting day of preschool Plus, the fact that this recipe is only 2 ingredients means it is beyond quick and easy to put together.


I love a quick and easy recipe I can put together at night for the next day and this totally fits that bill, plus I was able to pick up everything in my normal Walmart shopping trip. All I needed was a tub of Cool Whip and a small watermelon- these are things I am always buying anyways in the summer!


The best part is that right now, using this coupon, you can save $1 when you buy Cool Whip and 2 boxes of Jell-O instant pudding (you know I had to grab some chocolate because fudge pops are in my near future) while supplies last. You might even be as excited as I was and snap a selfie in the freezer section!


But back to the popsicles. I used my food processor but you could use a blender too, I think for recipes like this you have options. I had hollowed out a watermelon for another purpose and saved all the watermelon I had scooped out, about half a small seedless watermelon, and popped that in the food processor.


To that I added 3/4 of a container of Cool Whip, save that last 1/4, you will need it.


After it was all blended up, I added the mixture to my popsicle molds, carefully. I may or may not have spilled some and made quite a mess.


Once the molds are almost filled, I stirred up the left over Cool Whip and added another dollop on top of each popsicle, then I took a straw and swirled it through the watermelon mixture.


Then they go in the freezer and you wait, as patiently as possible, until the next day. That is when the come out like this:


Delish! And you can feel good about giving them to your kids because they are really just a fun twist on a fruit pop! Avery is quite the fan, I was going to take a picture, but she finished hers too quicly. I suppose that is a good sign!
