Maple Glazed Grilled Chicken

School is off to a start and just when I thought I might be figuring all this out, we have to throw the busiest holiday and activity season of the year in the mix and it is enough to keep any mom on her toes! That is why I am always looking for quick, easy and affordable recipes to feed the family and nothing gets more affordable than locally grown ingredients. Check out this grilled maple chicken breast with carrots and potatoes I made in no time last week!
First, I preheated my oven to 375 degrees and got my potatoes and carrots going, when it comes to veggies, sometimes I like to just see what looks good and is on sale at the farmers market. I don’t always have time to get there so it is a treat and it is the easiest way to make sure you are buying locally grown food. For the carrots I just simply added olive oil, salt and pepper. For the potatoes, Yukon golds in my case, I added olive oil and some grill seasoning to give a savory edge.
To pair with these delicious sides, I knew I had to have an equally as delicious protein and keeping with the locally grown products, I went with Foster Farms Simply Raised (without antibiotics) boneless skinless chicken breasts. I love how versatile a chicken breast is and these were no different! Plus, grilling them on my indoor grill pan is always the way to go for a quick weeknight meal!
I seasoned my chicken with my favor smoky rub with a combination of brown sugar, chipotle, garlic powder and salt. You can use your favorite seasoning hear but because we are going to glaze with maple syrup later, feel free to go a little spicy.
Once the first side is done, I flipped them over and then used a pastry brush to add some pure maple syrup, it really doesn’t get easier but this is a dish that is impressive enough for company but easy enough for a week night!
I cooked them until they had an 165 degree internal temperature and they were ready to go onto the plate! The potatoes and carrots were also coming out of the oven and dinner was ready to go!
