Easy Everyday Chicken Chow Mein

I love an easy and healthy dinner that is packed with veggies and this easy everyday chicken chow mein is where it’s at! I love how I can make this right after going shopping but it is also a great recipe to use before you go shopping to use up all the veggies you have on hand! This is more of a method than a recipe so let’s check out what you need as well as my secret, easy to find, substitute for chow mein noodles!

I love this recipe and it comes from a book of recipes that we also turned leftovers into when I was younger. This time I bought diced boneless skinless chicken, but you can totally use whatever meat you have in the fridge that you need to use up! As for veggies, gather up your favorites or whatever you have on hand. I used green onion, shredded carrots, mushrooms, broccoli, orange bell pepper, and green beans. As for my substitute? I almost never have chow mein noodles in my pantry and while I have made this with actual chow mein noodles, much more often I make this dish with whole grain THIN spaghetti. You can do it with regular (I totally have) but I really like the thin for this and I usually have a few varieties on hand. I start by putting water on to boil and then as it is ready I make the spaghetti according to the package directions.

I was able to find diced boneless skinless chicken for this so all I did was add some salt and pepper and sauteed it in a pan with a couple teaspoons of oil.

While that was cooking, I started chopping up my veggies- such a pretty cutting board of food!

Once the chicken was done, I pulled it out of the pan onto a plate on the side.

Next, I added all the veggies and an sauteed them until they were just starting to get soft. I like to keep some crunch in my veggies so once I felt like they were a couple minutes from being done (this took about 5-10 minutes depending on how many veggies you have in your pan) I added back in the rest of the ingredients.

I put the chicken back in as well as my favorite teriyaki sauce, Soy Vey, I really do enjoy the title but it is delicious as well!

Then all that is left to do is serve up you pasta with the chicken and veggies on top and you have an easy version of a favorite dish!
