Easy Box Mix Brownie Cookies
I love productive days, don’t you? You know, when you just keep knocking things off your to do list and ride that productivity all through the house?! That is what today has been like and to share in my good mood, I made some cookies with Avery and she had a blast! I scored a bunch of boxes of brownie mix on sale a while ago and thought I would make a spin off my cake mix cookies and try a brownie version! Let me tell you, it went over big! I didn’t have any because I am back on 21 day fix (I have my dessert coming later this week) but they got rave reviews from the picky 6 year old.
They are super easy to throw together in a stand mixer, all I needed was :
- 1 box of brownie mix
- 2 eggs
- 1/4 cup oil
- 1/4 flour
- 3/4 mix ins of choice
and the first thing I did was put the dry ingredients in the mixing bowl.
Then I added the eggs and oil and gave it a mix until it was a recognizable cookie dough consistency.
Now, all that was left to do was add the mix ins and give it another mix! I chose to go with half mini chocolate chips and half red and blue M&M’s since it was Memorial Day.
I rolled them into balls, placed them on a cookie sheet and put them in a 375 degree oven for 10-12 minutes.
Cool on racks and enjoy! I love easy recipes like this because you can make sure the cookie jar is always full or make spur of the moment recipes with your daughter!
