No Bake Pumpkin Pudding Pies

Alright y’all, it is September and that means break out the pumpkin! I would say fall except our forecast says it is going to be over 100 degrees this weekend so that does not count as fall to me- UGH! Seriously?? 100 degrees?? I digress, that is a rant for another post, back to the pumpkin. Because it is going to be so hot here, I wanted a fun, easy, NO BAKE and cold pumpkin dessert and this fits the bill perfectly! It is super easy, less than 5 ingredients, less than 5 minutes of work and then just an hour in the fridge and then you have little personalized pumpkin pudding pies like these! (Say that 5 times fast… or don’t, I won’t know.)

All you need is some instant pudding, 2 1/2 cups milk (or whatever you box directions say for pie) and 1/2 cup canned pumpkin. I started with the pudding and pumpkin in a bowl:

Then I added the milk:

And then I whisked it up for about 5 minutes until it was combined and thickening:

After that I grabbed these adorable personalized graham cracker crusts and I popped them in my muffin tin just to make it easier to transfer in and out of the fridge, it worked quit well.

Then I filled them up to the top with the mixture! Just saying, there is plenty to test after they are all full- and it is delicious.

After about an hour in the fridge, pull them out and add some whipped cream and you are done!! Super cute, festive and I didn’t have to heat up the house with the oven!! These would be fun for kids at school or even friends and family at a dinner party, I love a versatile dish!
