4 Ingredient Chocolate Chip Pumpkin Muffins
Alright, alright, I completely understand that it is still August, but I couldn’t wait any longer to break out the pumpkin! Over the weekend we had thunder storms so looking out the window it was rainy and cloudy- beautiful weather if you ask me. Well, it looked like beautiful weather anyways, it was actually still like 80-90 degrees so it was just a humid mess. But from my air conditioned house I could pretend that it was a chilly day outside which is what got me in the pumpkin mood. So this is what I came up with and it only has 4 ingredients, yup. 4.
Don’t they look yummy?? It all came when I saw this pantry staple, corn muffin mix and I remembered all the pumpkin I stocked up on last year. There are half the ingredients right there:
Back when I was vegan, a long time ago, back when my blog only had 4 and a half readers, I knew all kinds of substitutes for the foods I didn’t eat and one of my favorites in baking recipes was using pumpkin instead of egg. Since the corn muffins only use the mix, an egg and some milk, I thought it would be super easy to make them pumpkin muffins! Here is the recipe I used to make 12 muffins, everything but the chocolate chips gets dumped in the bowl and mixed well.
- 2 boxes of corn muffin mix
- 1/2 cup pumpkin puree (I used pumpkin pie filling because that is what I had, and it really didn’t need to be this big of a can, but again, that is what I had)
- 2/3 cup milk
- 1/2 cup mini chocolate chips
Next, the chocolate chips- yum!
Then I put them in a 350 degree oven (or whatever your box says) for about 15-20 minutes and you are done!
