30 Minute Meals

I love quick and easy meals, because life is crazy busy! I am sure you ALL can relate! My goal is always have something homemade on the table and even better if it takes me less than 30 minutes to make! Saving money buying the ingredients is just the cherry on the sundae!

I was at the Vons down the street from my house grabbing one of the main ingredients for my favorite quick and easy meal and realized that there is a coupon valid for THIS WEEK  (until Saturday) that gives $3 off when you buy 3 Hillshire Farm products. It can be found on Just for U, which is one of my favorite new money saving tools, especially the app because I can take advantage of deals right in the store, it is awesome and since I added the coupon to my card, I quickly grabbed up 3 items instead of just one and thought I would prep a couple of other meals while I made dinner!

Prepping while  I am already in the kitchen cooking is a great use of time and then I get to eat dinner and feel accomplished that I am already ahead of the game on the next day! All us moms know, it is imperative that we have a whole tool kit of quick recipes and prepped meals on hand!

First,  I will share with you what I made for dinner. Sausage, rice and broccoli is a go to recipe in this house because it is easy to put together and I usually have all of the ingredients on hand. Here is what you need:

  • 1 package Hillshire Farm Smoked Sausage (any flavor you like)
  • 1 box of rice (any flavor you like)
  • 1 container of quick cooking brown rice
  • 2 cups of broccoli
  • 1 tbsp of olive oil

It doesn’t get easier, first I start the rice, my secret for stretching the rice for this meal is to cook it completely, and then add a bowl of brown rice and mix it in. It is a much better idea than just grabbing two boxes of rice and your family will never know the difference. I slice up the sausage and saute it in a pan with a tablespoon of olive oil and the broccoli. That’s it. Can you believe it?? Super simple and it comes together in about 20 minutes!

This meal is fast and easy and always a hit, on nights that I just don’t have time- this is the perfect recipe!

While the rice was cooking, I thought I would make some breakfast muffins for the next morning, these also freeze great! I made a corn bread batter (you could even grab a mix and cut the time even more!) some Jimmy Dean Fully Cooked Turkey Sausage Crumbles and about a cup of shredded cheese.

I made the batter, added most of the cheese and half of the bag of crumbles, put in muffin cups, topped it with a bit of remaining cheese and DONE! Pop those in a 350 oven for about 20 minutes (or the temp called for in your cornbread recipe)! These are super quick and my family LOVED them… no really, I think they love me a little bit more after making these for them.

Do you see this face? That is a satisfied customer!

The last thing I wanted to prep was a quick lunch item. We have all made and bought pigs in a blanket, I much prefer made ones, but I love the convenience of having them in the freezer as well! So what did I decide to do? Make my own freezer version! All I needed was some Turkey LIt’l Smokies and some crescent dough! Because these are small, I cut my crescent dough in half and rolled them all up.

Here is the key though, place them on a pan and freeze them for about an hour. This way, when you throw them in the bag to go in the freezer, they won’t stick together and get all ruined.

When you are ready to cook them just pull them out, put them on the pan and cook them at 350 degrees for 15-20 minutes!
