21 Day Fix Approved Sweet Potato Fries
You know, I have been doing this whole 21 Day Fix thing for a while and have seen great results, but that does not mean that I never get cravings. The great part is that most of the time, I can find a way to have my cake, or fries, and eat them too! This was for sure one of those times, I love sweet potato fries and these totally hit the spot when it comes to a french fry craving! Check them out!
I started with my sweet potato (yes I know that this is really a yam, I don’t know why we all have it confused but I am using sweet potato because well, that is what all the bags of orange fries in the freezer section say) and made sure I peeled off all the skin.
Then I cut them up in slices (if you are new to 21 Day Fix, cubes would be easier to measure with the yellow container and they will cook fast) to get that fry feeling and laid them out in a single layer on a cookie sheet.
Next I added a tsp of olive oil for every serving, I used about 1 to 2 tsp for this half tray of fries.
For seasonings, you can do whatever your little heart desires but you want to use a salt free mix if you are using a store bought mix. Otherwise you can make your own, I love when my sweet potato fries are a little spicy because of the sweet base.
Then you pop them in a 450 oven for about 20 minutes, stirring in between, and they are done! Love the crispy edges and they are so good you don’t even need anything to dip them in! Yum!
