Homemade Onion Rings

I know I don't post a lot of recipes but that isn't because I can't cook, just that I don't think I am always doing the most new and innovative things in the kitchen.  This recipe, however, will save you money and we know I am all about that!

Oh. My. Goodness. Onion Rings have to be one of my most favorite thing ever! BUT they are expensive and sooooooo bad for you. 

Not saying mine are going to be on the next fad diet, but they aren't fried and that is a start right?

I was watching Hungry Girl on Food Network and she made oven baked onion rings with egg substitute and jazzed up ground fiber cereal. I didn't have that so I just used eggs and Italian bread crumbs and it was DELISH!!!

I was so surprised at how yummy it was, and I sided it with sloppy joes with veggie crumbles and grated carrots and roasted broccoli. Best. Dinner. Ever.

First I sliced and separated the onions. 


Then get your eggs in one bowl and the bread crumbs in another. 
You know the deal; onion in the eggs and then in the breadcrumbs, and on the cookie sheet. 


In the oven for about 20 min at 400 degrees. 


Then on the plate!!
